What we've been eating...
Last week was a big week in our house; Lann was home every night for dinner. Lann travels a lot for work so for him to be home for dinner every night for a week is a special treat. It’s nice to have someone to cook for every night!
I always have a stockpile of recipes that I want to try or that I’m craving that I stash for weeks when Lann is home. Last week was no exception, the minute I opened our weekly CSA box I knew exactly what I wanted to make. It’s that special time in Wisconsin when the tomatoes are almost gone but butternut squash is in season. It’s the perfect time of year to make ratatouille. I have tried several ratatouille recipes in the last few years but once I found Yotam Ottolenghi’s Tamara Ratatouille I have never made another. This is the most flavorful, comforting ratatouille imaginable. I serve topped with goat cheese and fresh parsley with a side of garlic bread.
Second on my list was David Lebovitz’s Chicken Marsala. I had never made chicken
marsala before this but the idea of chicken swimming in mushrooms and wine sounded like something we should be eating as it gets colder out. This was everything I was expecting it to be and more but I think next time I’ll serve on mashed potatoes instead of noodles. No matter what, mashed potatoes always win.
I’ve had a few other projects going on in the kitchen lately, they all have centered on
fall veggies. I’ve been roasting pans of brussel sprouts, broccoli and beets almost
daily for side dishes and lunches. Lann and I also hauled home a trunkful of
pumpkins from our favorite orchard. I have to pie pumpkins roasting in the oven as
I write. They’ll be turned into puree for pumpkin bread and pie. The seeds have
been turned into the most incredible pumpkin seeds ever, but more on that later
